Established in 1823, and located in Ishikawa, Shata Shuzo Brewery follows the traditional process of the Noto-toji Master Brewer’s Guild. Their water is sourced by the neighboring Mount Haku located on the border between the Ishikawa, Gifu, and Fukui prefectures.
The aroma is lovely. Floral forward and very fragrant. At first you are hit with a sharp note of licorice and then ending in a sweet raspberry-like finish.
