Namazake is a type of sake that is not pasteurized. This is said to offer a unique, and constantly changing, flavor profile depending on how long it’s been stored and in what conditions.

This sake is brewed by the Honke Matsuura Sake Brewery located in Naruto City, Tokushima Prefecture. It was founded in 1804 and is the oldest brewery operating in Tokushima.

This is occasion stands as my introduction to unpasteurized sake. I am not entirely sure I could pinpoint the fact that it was not pasteurized, though I think it had a crisp feel to it as well as a prominent alcohol aroma.
